B if you can get that thing near air tight you'll be able to heat it with a candle... the key is to keep the warm air in, and the cold air out (keeping the wind from blowing through it is key). Look on Kijiji for Insulation, it comes up from time-to-time. Ideally you want fiberglass bats as it doesn't melt and burn like rigid stuff (especially good in a garage).
As for strapping, you can use just about anything as long as it is the right thickness. Brookfield lumber has all kinds of material they make there (rough cut) that you could use. This is a garage and not a show-room after-all. If you opt to put up gyprock (you should, for fire protection) you'll want the strapping to be about the same thickness though.
When I bought some insulation a few years ago it was cheapest at Home Depot, though supporting local business is nice (and I realize Home Depot is out of the way for you).

well i have acquired 1482sq/feet of insulation, time to start the insulation party!!
I have calculated (left the numbers at home) but i should only need around 1150 sq/feet to do the whole shop. that is subtracting the 7x9 door but not accounting for the 2 windows and man door. so its probably around 1100.
I will pick up a roll of vapour barrier friday and some tape and start on the walls since they are the easiest.
I am unsure what to do about the ceiling. right now it has some crazy truss work going on which makes the space up there basically unusable other than if i wanted to store some sheets of plywood or something.
i was thinking of rather than stuffing it in between the 2x4's in the roof, putting in a ceiling and laying the insulation on top of that. I'd rather only have to heat an 8H x 16W x 20L space than a 16H x 16W x 20L which seems like a waste.
I haven't decided on heating yet, right now I have a 1500watt quartz heater. which will heat a small 8 x 8 room in 20 minutes to 20 degrees from about 12 degrees. So basically triple that and it should keep the shop at least warm'ish for now.
I'll get some good "shop as of now" pics when i get home from work so you "bob the builders" can give me some good feed back.
As far as i can read the insulation process is as simple as stuff it where you can, vapour barrier it, seal it with tape, drywall it.
at the same time i should "rough in" some electrical as i'd like to move around the existing plugs to be more accessible.
There appears to be a little more fore-thought that needs to go into this than i originally planned.

You'll loose most of you heat throught the ceiling so it should be high on the priority list
Plus, I have been warming mine with a 5000w construction heater I got off Kijiji. on those -10 days I had the garage to 15 degrees. 28x24 10 ft ceilings and very well insulated.

I don't plan on trying to heat it without the ceiling being done, i was just unsure of about the more efficient way to do the ceiling and what was common practice.

The biggest thing is the vapor barrier B - if you can keep the hot air from escaping (wind from blowing through) you can keep the heat in way better. Next comes insulation. More insulation you have the longer you'll be able to hold the heat (and the less you'll loose due to heat transfer). This means you need to throw the insulation in the walls, then vapor-barrier the hell out of it. Tape up any and all seams.
Acoustic sealant is nice in that it forms a seal between the studs/headers/sills. It makes it so air can't get up from the bottom (hard to tape the plastic to the floor/2x4s) or down in from the top.
While you're roughing in some electrical run some pex in the walls for air. No better time to do it! Spend $50 or so on fittings so you can have the convenience of multiple air outlets it later.

well so far I've gathered I should be prepared for the following material..
soffit vents vapour barrier tape rough strapping sealant Dry wall can come later. I do like the pex pipe idea for the air, but i think i'll skip it, if decide to do it, which i can see myself enjoy an outside outlet for airing up the piping is fairly non-intrusive and i wont mind running it on the outside of the wall.
I am hoping Brookfield lumber has all of these goodies to make it easy. I'll call in a few minutes and find out prices.

Brookfield has 1"x4"x12' strapping (just used a whole bunch for a metal building) and lighter stuff as well...

I think so buddy. It is after-all just a garage... if you are running electrical outlets the the little condom things to put the electrical boxes in, they're a buck or two and make life easier (Put electrical box in condom, screw to wall, fish wires in, tape, put vapor barrier over top, cut small x in vapor barrier where you want the hole, tuck vapor barrier behind edge of plastic condom, tape, move on to next one)

At the bottom of your wall, did you put your acoustical sealant along the seam between the wall plate and concrete? I imagine you did, it looks like you've done everything else good.
