i think it,s only 70a welder so you can only weld Metal thickness: 20-gauge to 1/8" so start off with some metal that thickness

Layed a few new beads on a piece of 3/16 plate... Any better?? Is all the spatter around normal for flux welding? Or does this this mean I need to adjust wire speed more or adjust temp?

First one is best of the 3 . Look at the 2nd one , see where its fat then thins out ? that is your hand speed , small jerks do this
the splatter is the flux core , its messy , that is why its easier to learn with gas
learning where to set your heat / wire feed is key , and hard to learn / explain
Listen to the splatter , it should sound consistent , sound like bacon frying

i thought myself how to weld in my garage it just takes time and wire lol im still useing flux core just keep at it !

The splatter is normal and a flap wheel on your grinder will be awesome for clean up. Once you get a chance to try it with gas you will see a huge difference.
